Does it replace Google Analytics?

For most sites, yes, and the importer can even pull your GA history. Real-time, campaigns, goals, ecommerce tracking, and funnels are all there, with the tracking script served from your own domain, which ad blockers treat far more kindly.

Can Matomo track sites on other servers?

Of course: one Matomo instance tracks every site you run anywhere, which is exactly how agencies use it. Stacked next to a WordPress here it shares the server; tracking client sites elsewhere just needs the snippet.

Is the archiving cron handled?

How long is data kept?

As long as you want, it is your database, and it is backed up daily to two offsite destinations either way.
